Howdy! Tonight’s dinner is a cowboy’s healthy, yet tasty, dish. The dish is simple to prepare that even severely challenged chuck-wagon cooks can prepare and feel good about.
I call it the, Easy, “Can-Do” Cowboy Dish.
You start with simple garden vegetables. Whatever harvest happens to land on your cutting board, liberally select the amount you need; wash and begin. If need be, the grocery shop produce works just as well.

Next, chop up the vegetables and fry in some oil. I love olive oil but use what you have in your kitchen.

An option that is necessary for meat eaters…sliced, smoked beef sausages, or your own personal meat favorites. Mmm, this final touch, with a liberal sprinkle of the All Purpose Cavender’s Greek Seasoning and black pepper, is all you need, pardner.


Voila! This healthy cowboy dish was simply done up by a much challenged chuck-wagon cook.

This looks delicious, Sunshine. I like all kinds of Cowboy dishes. Mostly with chickpeas or goat’s cheese instead of meat. Have a nice dinner
Chickpeas! I must incorporate them more often…but goat cheese, now that is different. Honestly have not had any yet…better go out and find some to taste. Is it like regular cheese or something like feta cheese in taste?

It’s a little bit like feta, but not so salt, less acid and easy disgestable. You can put it into your meal and bake it in the oven, or grill it.

Easy yet delicious and filling. Me, anything with egg would do. I even microwave the egg, put a bit of mayo, cheese and ketchup with bread and viola…instant egg sandwhich!
